Wild Garlic Wedges
Potatoes may well be my favourite ingredient when it comes to versatility of how you can prepare and eat them.
In Spring-time, wild garlic wedges with wild garlic mayonnaise make my tastebuds do a happy dance!

You will need…
2 Baking potatoes
Wild garlic oil
Sea salt flakes
Preheat the oven to 180 fan.
Scrub the potatoes but don’t peel them. Slice in half lengthways and then cut each half into 4 or 5 long wedges.
Toss the wedges in wild garlic oil (or the wild garlic purée leftover from making wild garlic oil, along with some further rapeseed oil) and season with sea salt flakes.
Bake in the oven for 35 minutes, turning halfway.
Serve with wild garlic mayonnaise.
